We challenged ourselves to create the finest Junmai Daiginjo by using Yamada Nishiki rice polished to the extreme limit of 23% (77%). It boasts a gorgeous aroma upon pouring and a beautiful honey-like sweetness when tasted. The finish is clean and sharp yet lingers with a long-lasting aftertaste.

Company Mission
Established in Meiji 42 (1909), our sake brewery is relatively new in the industry. Prior to that, we had a history of two generations brewing soy sauce and miso. Our unique ‘super refined’ method, which suppresses the characteristic funkiness of sake, is known for its refreshing taste and has been widely beloved in our local region, the Tokai area. This region is a major producer of pottery, with a thick clayey soil that yields exceptionally soft water, even among other soft water sources. Taking advantage of this ideal environment for sake brewing, we have been crafting crisp local sake for four generations.
